Want to buy NVME SSD Enclosure.

You could possibly clone NVMe to external or NAS and then install new nvme into the system and clone back again.

It should work, provided the cable supports High speed data transfer. Some cable only charges and don't transfer data, some does both. You need data transfer cable.
If you skip, I would like to show interest in the enclosure.

Might work, it's a normal speed 480mbps. You should search for 5gbps cable. Else cable might be the bottleneck for the enclosure.

Nope for full speed use 10gbps for nvme or 5gbps for Sata. Majority of the cost for these enclosure is bound to the cable so I would've suggest to buy new, cause these things cost half of the price. (For searching check terms like USB 3.1 gen2 cable)
