Key here is to use chargers which are capable of USB-PD. I think Realme 65W charger is not compatible as it is not same tech. To add, M1 iPad Pro is capable to fast charge at 18W only. Edit: I have noticed mentions of 65W GaN adapter able to get it charged at 36W. But I am not very sure on...

In general for Apple products, in my experience, battery for each device will behave differently. When I had iPhone 11, it was down to 89% in a year with about 250 charge cycles. It would keep going down and settled on 82% and stayed at that level for almost 9 months - till I sold the device...
